Cinnamon Apple Streusel Caramel Trifle Recipe


Direct from the Hungry Monkey Baking Kitchen we decided to make these delicious Apple Streusel Caramel Mini Trifles that serve 6-8.

Salted Caramel Sauce
-- 1/2 cup water
-- 1 cup sugar
-- 3/4 cup heavy whipping cream
-- dash flaked Sea Salt like Maldon flaked sea salt (optional)
-- 3 TBS unsalted butter

Whisk water and sugar on medium-low until bubbles form. Then, increase heat to medium and stir constantly for 6 - 8 minutes until the mixture turns an amber color. Remove from heat. Pour in the cream, butter, and salt. Pour into a glass container (a Mason jar works well). Cool to room temperature, then refrigerate. WARNING; it may spatter so stand back! It's EXTREMELY hot. 

Cinnamon Apples
--One large apple, sliced thin - medium
--dash Cinnamon
--dash nutmeg (optional)
--unsalted butter
Heat sliced apples in butter on low, add a dash of cinnamon and nutmeg if you want until caramelized. Remove from heat and let apples cool completely. They will be for layering in the trifle and for decoration

Trifle
--1 Hungry Monkey Cinnamon Apple Streusel Cake (or make your own), cut into thin slices (best to cut the cake frozen with a chef's knife) then cut again down the center of the loaf lengthwise.

-- 2 cups heavy whipping cream, very cold

-- 1/8 cup Creme fraiche or Sour Cream
-- Confectioners' sugar to taste (1/8 cup, more or less to taste)
-- dash Cream of Tartar

Equipment

-- Electric beaters/KitchenAid with a whisk attachment

-- Rubber spatula

-- Whisk

-- Medium saucepan

-- a Piping bag with a small circle tip

 

Whip up the heavy whipping cream with a dash of cream of tartar. Add sour cream and confectioners sugar after soft peaks form. Whip until you have more stiff peaks and refrigerate. Spoon it into a piping bag (you can also use a teaspoon to do this). 

Using small Mason jars, pipe in the whipping cream on the bottom.

 

Place slices of cake on top of the whipped cream.

Spoon on the caramel sauce on top of the whipped cream, making sure to get the caramel as close to the side of the mason jar as possible so you can see it from the outside of the glass. 

Add a slice of the caramelized apple.

  
Repeat steps.
Top with whipped cream and place a cooled sliced, caramelized apple on top. Drizzle with additional caramel. Serve immediately -- or refrigerate.

Put tops on for easy transport and tie with raffia for a picnic!
