It's National Rice Krispie Treat Day! Peanut Butter Rice Krispie Treat Recipe

Two years ago, I visited a magical place in the Smoky Mountains called The Swag. My cousin took me and our friends for our 60th birthday celebrations. They served us a crunchy bar before we went on our hike and it was DELCIOUS. I changed it a little bit and added the Rice Krispie Cereal for more crunch and Maldon Flaked Sea Salt to give a little contrast to the sweet. You will not be disappointed. My friends love it so much that they jokingly call it "crack!"

Since it's National Rice Krispie Treat Day here is a great recipe for Peanut Butter Rice Krispie Treats!

INGREDIENTS

  • 1 cup white sugar
  • 2 cups peanut butter
  • 16 oz. Ghiradhelli Bittersweet Chocolate Chips (can use Hershey's semi-sweet as well)
  • 1 cup white Karo syrup
  • 6 cups Rice Krispies
  • Maldon French Sea Salt Flakes

Put sugar, syrup and peanut butter in a large heavy, nonstick pan. Heat very hot, almost to a boil, but do NOT let boil, stirring constantly. Take off stove and mix in Rice Krispie cereal. Mix well.

Press into lightly oiled pan (9x13.) Sprinkle chocolate chips evenly oven the top. They will melt after a while but to speed up the process, put in a warm oven for a few minutes. Use an offset spatula to smooth over the top. Put in the refrigerator to set for a few minutes. Then, sprinkle flaked sea salt on top, use sparingly.

Score into bars while still warm as they are hard to cut when cool. These freeze well, but you could also refrigerate to set the chocolate.
