Best Pancakes for National Pancake Day

We make pancakes almost every weekend. It's our Hungry Monkey's favorite! And, like our cakes, we use buttermilk in our pancakes. It's our secret weapon to making the most delicious and tender pancakes. INGREDIENTS 3 cups all-purpose flour 1/3 cup sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon kosher salt 2 large eggs 2 1/2 cups buttermilk 1 teaspoon pure vanilla extract 1 stick unsalted butter, melted and cooled, plus more for brushing DIRECTIONS 1. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl.
